Y'know, I've been wondering about the hollows for a while. I mean... obviously there's a certain degree of change in personality, and yet the arrancar apparently can think and react and reason like a person. But is it the same personality as their past life, or do they no remember it, or what?
I mean, we only have such partial answers... but yeah, best I can think of is that the process of becoming a hollow causes one's personality to be twisted. Things that would've been unthinkable before start to become possibilities and then even desirable. Though whether there's any direct correlation between a given emotion/feeling/trait and a particular aspect of the hollow is hard to say, because it probably varies from case to case. You'd have to look at individual examples instead of generalizations.
Grimmjow isn't a sadist in the sense of basically getting off on other peoples' pain. He's more in the sense of a bully, he wants to hurt people because it shows he has power over them, and gives him power over them. If he can sit and deliberately kill someone slowly, that's exercising that power. He likes to fight because it gives him the chance to inflict this pain.
By comparison, Ichigo likes to fight to an extent to test/show off his strength, and also simply rushes in because he feels the need to protect. As for Kenpachi, he fights for its own sake. Probably after the sort of life he lead where it was necessary to survive, fighting and the pain and the adrenaline that goes with it is what makes him feel alive, in a sense. But neither Ichigo nor Kenpachi fights with the specific intent of causing pain to the other person.
